
With the rainy weather over the last week, I couldn’t get my fill of soups. I’ve fallen in love with the comfort of a meal in a bowl, but with sunny skies and warmer weather in the forecast, the traditional versions didn’t seem like the way to go for this week’s recipe. After surveying the ingredients in my refrigerator, I put together this spicy, chilled cucumber soup. Its still a comforting meal in a bowl, but it also offers refreshment and pure summer time goodness.
Ingredients:
6 cucumbers, peeled, seeded and coarsely chopped
2 yellow bell peppers, stemmed and seeded, coarsely chopped
4 green onions chopped
2 jalapeno peppers, seeded and chopped
2 Tbsp. fresh cilantro, chopped
1 Tbsp. fresh mint, chopped
1 Tbsp. fresh dill, chopped
3 cloves garlic
2 Tsp. salt
1 Tsp. ground cayenne pepper
1/4 Tsp. paprika
3 C. plain yogurt
2 C. sour cream
3 Tbsp. olive oil
2 Tsp. white wine vinegar
black pepper to taste
Combine all the above ingredients into a blender or food processor and blend until desired texture. Enjoy!
