These cookies will make you a star. Who can resist anything with bacon (it is the gateway meat after all)?

Ingredients:
3/4 C. bacon fat
1 C. sugar
4 Tbsp. dark molasses
1 large egg
2 C. all purpose flour
1 1/2 Tsp. kosher salt
2 Tsp. baking soda
1 Tsp. ground ginger
1 Tsp. ground cloves
1 Tsp. ground cinnamon
3 slices bacon, roughly chopped for garnish

Combine all ingredients and mix well until dough forms, but it still slightly sticky to touch. Wrap in parchment paper and let rest in refrigerator for 1-3 hours. Preheat oven to 350 degrees. Drop the dough onto cookie sheets lined in parchment paper, leaving a space of 2 inches between each cookie. Press each cookie flat with your fingers and place a chopped piece of bacon in the center. Bake in the oven for 10-12 minutes, or until dark brown. Let cool on baking sheets for a few minutes, then transfer to a plate or baking rack to finish cooling.
