
What I intended to be a delicious, refreshing summertime fruit salsa to accompany a bag of bodega tortilla chips last night ended up being every dinner guests’ favorite fajita topping. Whichever way you choose to use it, this recipe is a hot weather keeper.
Ingredients:
1 mango, peeled and cubed
3 peaches, cubed
2 jalapeƱos, minced
1 bunch green onions, white and pale green parts chopped
1 small white onion, chopped
1/4 C. cilantro, minced
1/4 C. mint, minced
juice of 3 limes
2 Tbl. sugar
salt to taste
Combine all ingredients and let them sit in the refrigerator for at least an hour before serving.
